FUERTEVENTURA, SPAIN: Opening a review of a five-star hotel by talking about black potato is something I don’t do every year. However, I was surprised to hear an islander asking for quineguas, which is the local name of black potato. But we stay at Atlantis Bahia.

Fuerteventura is famous for two things – the year around sun and the potato. In particular the historic black potato, cultivated in the island. The restaurants at Gran Hotel Atlantis Bahia Real serve delicious Canary potato – or Papa Canaria. The recipe is as simple as it is a treat. Put some unpeeled potatoes in a saucepan, cover with water and add sea salt, a lot of salt. After 25 minutes they are ready to eat dipped in Canary mojo sauce.
